Here’s an easy recipe for the family. Make this together for family fun.

Family fun recipe

 

Stuffed Sweet Potatoes

2 medium sweet potatoes, cut in half lengthwise

3 cups of shredded or chopped cooked chicken

2 cups of cooked broccoli, finely chopped

½ cup of barbecue sauce, divide this in half

1 tablespoon chopped parsley

¼ cup sliced green onions (optional)

2 tablespoons parmesan cheese

Preheat oven to 425 degrees. Place the sweet potatoes cut side up on a foil lined baking sheet. Roast the potatoes until tender. About 40 minutes.

Stir together cooked, shredded chicken, and cooked, chopped broccoli and ¼ cup of the barbecue sauce. You can add more if it seems too dry. Heat over medium-low heat in a medium saucepan, until warmed throughout. About 8 minutes.

Top each cooked sweet potato with the chicken mixture. Drizzle with barbecue sauce and top with green onions, parsley and parmesan cheese.

Put your potato toppings in dishes and let your family top their own.

For a vegetarian dish, omit the chicken, add another vegie like corn, tomatoes, or whatever you like.
